Potato skins are pretty simple. You probably don't really need a recipe to make them. Yet, while we enjoy these appetizers at restaurants all the time, I had never made my own. Until now....
And I must say, the homemade kind is even better than the restaurant.
Start by washing small potatoes and then rubbing them with some vegetable oil.
Do this with all of the potatoes and then place on a baking sheet...
Bake at 400 or 450 for 45 minutes or so until your potatoes are soft in middle and the skins are crispy on the outside.
Meanwhile....
Fry up some bacon.
Grate some cheese...
Once the potatoes are ready, remove them from the oven, and slice them in half. Scoop out some of the insides. Brush with butter. Sprinkle with salt. Flip them over and brush the outside with butter and sprinkle that side with salt too.
Then add your toppings and place back in the oven for 10 minutes or so - just until the cheese is melted.
Add green onion and serve with sour cream.
Look at that. Deliciousness.
