Pretty potatoes


Yes, I've decided to call them pretty potatoes. I think they are pretty.  Plus, I have a lot of potato recipes so i needed to distinguish them somehow.

Start by chopping up an onion.  Then start the onion cooking in a pan with some olive oil on low.  You want to cook it  on high enough heat to get the onions to brown, but not burn.

Then add some finely chopped red pepper.

Then cut your potatoes into bite size pieces.  I use a variety of potatoes.  The many different colors are what make pretty potatoes so pretty.

Mix the potatoes with a splash of olive oil in a bowl and stir together to coat the potatoes. Cover the bowl with plastic wrap and microwave for 3 minutes.  Toss the bowl to mix up the potatoes and cook for another 3 minutes. Then drain the potatoes.

Turn the heat up and add the potatoes to the skillet.

Let the potatoes cook.  Stir frequently and the potatoes will start to brown. Add a bit more oil if needed.

While the potatoes are cooking, you are going to make a lemon herb sauce to top them with.  In a bowl, combine a tablespoon or so of lemon juice, 2-3 tablespoons of olive oil, freshly diced oregano (or other fresh herbs), crushed red pepper, salt, and freshly ground black pepper.

When the potatoes are fully cooked and have nice golden color throughout, remove from heat and transfer them to a bowl.  Pour on the lemon herb sauce.


Then stir it around to ensure the potatoes are all coated with the sauce.

Top with a little sprinkle of salt.

Enjoy with crispy pan fried pork chops and pan roasted asparagus.
