Zucchini Roll Ups


Start by gathering your ingredients:
Zucchini, red peppers, fresh Parmesan, goat cheese, salt, pepper, garlic powder

Roast the red pepper in a 500 degree oven for about an hour.  Flip it every 20 minutes or so until it gets blackened on each side.  It smells delicious! Then cut, remove seeds, peel, and slice.  Peeling is quite easy. Once its roasted the peel just slides right off.
Slice up the zucchini.  Brush with olive oil.  Sprinkle with salt and pepper. Then flip the slices over and do the other side.  You'll want the slices to be thick enough that they hold together but thin enough that they can be rolled up without breaking.
Then grill up the zucchini.  I used my indoor cast iron grill - it's cold outside! If it was summer, I'd probably do the grilling outside.

Assemble all the ingredients once again:

Spread the goat cheese on the zucchini slices.  Then sprinkle with fresh grated Parmesean.  I also sprinkled a little garlic powder at this point (not pictured).  Then place the red pepper piece in the middle, roll up the zucchini, and secure with a toothpick.

Serve either at room temperature or cold.

  1. Do you have to coat the red pepper with anything before roasting it?

    1. Nope! Just pop it in the oven! I put it on a cookie sheet.
