Orange Chicken

 

This is one of our favorites.  It is easy to make and delicious every time!

 
I started by gathering some orange zest and orange peel from my oranges.


Next, I cut up the chicken and cooked it with a bit of salt and pepper.
Then I made the sauce.  Saute some minced garlic and green onions.  
Then add the tomato sauce.  Add sugar, soy sauce, Sriracha, and orange zest/peel.



Oh, and don't forget to make the sides.  We prefer white rice and sugar snap peas!!

Let the sauce simmer and thicken until it looks something like this....

Then add the chicken back in!  Put everything on the plate and enjoy.


The details:

For the sauce
15 oz can of tomato sauce
a little garlic
green onions to taste
about 1/2 cup sugar
3 tablespoons Sriracha (or more or less depending on how spicy you like things)
3 tablespoons Soy Sauce
zest from one orange
orange peels from another orange

Sugar Snap Peas
Saute sugar snap peas in pan with a bit of olive oil
Add a splash of soy sauce
sprinkle a little salt

Bruschetta with Pear and Gorgonzola

 After discovering this little delightful snack at a wine bar, I had to make a version of my own.





So I started by making some orange infused honey.  Zest an orange and combine with honey in a double boiler.


Next, I sliced up the bread.  I wanted it to be crispy and golden brown.  So I toasted it with some butter and a little sugar in my cast iron skillet.  It was a little crispy on the edges, but I kind of like that. It adds character.


Next, I added the toppings.  Peel and slice the pear and place on top the toast.  Then add sprinkles of Gorgonzola cheese crumbles.

Then I baked it in the oven until it was warm and melty.  To finish it off, I drizzled it with the orange honey and sprinkled a little salt to balance out the sweetness.


And, of course, enjoy with a glass of wine.  Ta da!
